MITSUMOTO SAKARI 8 inch Professional Japanese Hand Forged Kitchen Knife Our professional chef's knife combines the shape of a traditional Western chef's knife with the lightweight design of a Japanese knife. This results in a knife that offers added durability, exquisite cutting ability, and ease of rocking, cutting, slicing, and dicing. The blade is polished and forged by a renowned Japanese knifemaker, using 3 layers of 90CR18MOV composite steel with a hardness of 58±2 HRC. This significantly improves sharpness, thinness, edge retention, strength, and rust resistance.
The ergonomically designed mahogany handle and well-balanced, slightly curved blade ensure that cutting with this knife is easy and precise.
