The Ypsilon series, a handcrafted and highly exclusive line of knives, is produced by the renowned knife maker Yaxell in Seki, Japan. This set includes a 4.75" petty/utility knife, a 6.5" santoku knife, and an 8" gyuto/chef's knife, as well as magnetic wooden blade saya covers and a katana-style wooden knife stand to showcase these exceptional pieces of cutlery.
These knives are constructed from Japanese SG2 Micro Carbide powder stainless steel and feature hand-engraved Japanese kanji on the blades, with a Rockwell Hardness of 63. The blades are also made with a 193 layer stainless steel Damascus construction and a SG2 steel core, offering a double-bevel edge for both right and left-handed use.
The black canvas micarta handle is adorned with an 18/10 stainless steel bolster and engraved end cap, red spacers, and a Samurai Crest. The enclosed full tang handle construction ensures strength, durability, and balance.
For maintenance, it is recommended to handwash the knives with warm water and mild detergent, and they have an approximately 12° blade angle. Each knife is meticulously handcrafted in Seki City, Japan and comes with a lifetime warranty.
