The Yaxell Ketu knives are handcrafted in Seki, Japan, using high-performance SG2 powder stainless steel. This steel is exclusive to Japan and is produced through powder metallurgy, resulting in a fine microstructure that allows for further hardening without compromising toughness. The knives undergo a heat treatment and ice hardening process, achieving a high 63 Rockwell hardness rating (HRC), which improves edge retention compared to VG10, AUS10, and other similar stainless steels. The 3-layer construction protects the SG2 cutting core and enhances corrosion resistance.
A stunning tsuchime blade finish creates a hammered effect that enhances food release. The hand-sharpened edge, with an angle of 12 degrees and an even double bevel, ensures razor sharpness right out of the box. The carefully crafted handle is made of resin-infused wood fibers, providing comfort and durability. It is accompanied by a stainless steel bolster for balance, adorned with a traditional Japanese mosaic pin and an embossed Yaxell kanji logo on the end.
The knife has an 8" blade length and a 1-3/4" blade height, with an overall length of 13-1/4". It weighs 7.1 oz (205g) and is suitable for both right and left-handed use. Handwashing is recommended to maintain its quality.
